A sweet “soup” from the Visayas region.
Binignit is a popular snack to enjoy during Holy Week, particularly on Good Friday. It is similar to the ginataang bilo-bilo of the Luzon area.
Ingredients include root crops like purple yam (ube) and sweet potatoes (kamote), as well as thick cooking bananas (saba / kardaba), coconut milk (gata) brown sugar (muscovado), and sago pearls. A unique addition is landang, which comes from the buli palm tree. One can also add strips of jackfruit (langka), anise, and glutinous rice.
