Fried Carabeef Tripe
Sinalpungan is one of the iconic dishes from the island province of Catanduanes. It is often eaten alongside drinking alcohol.
How is sinalpungan cooked?
Carabao tripe is fried with a lot of onions. The tripe is comparable in taste to isaw (another Philippine delicacy made from chicken intestines), although understandably sinalpungan is tougher and coarses and has the strong flavor of large animal innards.
